Foodie Friday: Cheesy potato bake
A nice cheap midweek meal.
This is based on a recipe i found on the BBC good food site although i have changed it a bit, you could also make a smaller amount of it and serve it as a side.
- Around 1kg of potatos peeled and chopped into bitesize bits
- knob of butter
- 1 chopped onion
- 200g smoked bacon,cut into smallish pieces
- 150ml double cream
- Around 200g of grated cheese(i used vintage chedder and red leicester)
- 1/2 tsp of smoked paprika
Boil the potatos in a pan for around 10 minutes then drain. While they are boiling fry the onion and bacon in the butter then mix with the drained potatoes. Stir in in the cream, the paprika and most of the cheese and put into a buttered baking dish. Sprinkle over the rest of the cheese, cover with foil and bake in the oven on 200C for 25 minutes. Remove the foil, sprinkle over a little more paprika and put back into the oven uncovered for another 20 minutes.
All 3 of us enjoyed this. You can of course add more or less cheese depending on your tastes.
