Philadelphia Mac and Cheese

I am sure that you have all seen the current TV advert for Philadelphia mac and cheese, where the woman makes macaroni cheese using the famous soft cheese for her three fussy boys and they wolf it down.

With us being a cheese loving family(and having three hungry boys myself) i decided to have a go at making it myself. I love making macaroni cheese the traditional way but it always fun to try a family favourite another way and it required fewer pans! I am always a fan of less washing up! 
I adapted the recipe slightly to suit our tastes subbing the sweetcorn for spring onion. You could add any veg really, I bet red onion would be lovely or broccoli. I also think it would be nice with the ham swapped for bacon or roast chicken. Another option would be to use one of the flavoured Philadelphia's which are now available.

Philadelphia macaroni cheese

Philadelphia macaroni cheese, Mac and cheese

300g macaroni pasta
120g Philadelphia
150ml semi skimmed milk
75g cheddar cheese, grated
75g  ham, cut into cubes
Spring onions, finely sliced

Preheat the oven to 190 C. Cook the pasta. Once it is cooked drain and pop back into the pan, add the milk, Philadelphia and half of the cheese into the pan and stir together until the soft cheese has melted then add the ham, spring onions and stir in.

Pop into a ovenproof dish, top with the remaining cheese and bake in the oven for around 15 minutes. Serve!
