Anything with an Italian twist goes down well in our house so when I found a recipe for Italian Chicken with rice on the BBC Good food site a few years ago I know it would become a family favourite. I have cooked this dish so many times now. It is easy to make and everyone enjoys this simple dinner.
I stick pretty close to the original recipe as is really doesn't need much changing! I add extra garlic and change the stock depend on what I have to hand. I am definitely going to try this in the slow cooker soon and maybe with beef instead of the chicken.
2 tbsp olive oil
2 chicken breast, diced
1 large onion,
2 peppers (I like red and orange) chopped
2 garlic cloves, crushed
100g long grain rice
1 carton of passata
300ml chicken or vegetable stock
green pesto (ready made or home made)
Pre heat the oven to 200C. Pop the oil into a large pan and cook the chicken until golden brown, then remove the chicken from the pan and keep to one side. In the same pan fry off the onion and peppers for a couple of minutes until softened and add the crushed garlic, fry for another minute or so.
Add the rice, passata and chicken stock to the pan with the onions and peppers and bring to the boil, turn down to a simmer and add the chicken to the mixture, stir so the ingredients are combined. Simmer for 5 minutes or so before adding to anot ovenproof dish. Pop into the oven for 30 minutes until the rice is cooked through.
Serve with pesto to stir through.
