Foodie Friday: Caulflower Cheese
Cauliflower cheese is one of those super cheap and easy foods that you can have as a main or a side. It was one of the first 'meals' Seb ate and he still loves it now. I've posted a basic recipe but you can make it more exciting by adding more veggies(brocolli is good) or bacon bits or whatever you like really!
This isn't from a book so i've just done rough measurements as i've said before i don't tend to measure things exactly.
- 1 cauliflower
- 25g butter
- 25g plain flour
- 400ml milk(i use semi skimmed for us but whole if making it for Seb too, both work fine)
- 200g cheese(i just used a mix of what was in the fridge)
Preheat your oven to 200C.
Chop the cauliflower and pop florets into a pan of boiling water for 6-8 minutes to simmer.
Meanwhile pop the flour and butter into a pan on a medium heat, and as the butter melts mix into a paste, then add the milk a little at a time and keep stirring! Once all the milk is in add just under 3/4 of the cheese, stir it in and turn the heat up so the sauce begins to simmer around the edges, still stirring, as soon as it starts to simmer turn the heat right down low or even totally off and it will start to thicken, you can stop stirring now! I remove it from the heat and leave to stand for a few minutes giving it the chance to thicken up.
Drain the cauliflower and pop into a pyrex dish and then cover with the cheese sauce. Sprinkle over the remaining sauce and then some breadcrumbs for a bit of crunch.
Pop into the oven for a 20 minutes until the cheese is melted and you're done.
