This is the soup we made on Tuesday night. I thought i'd pop the recipe up as a few people seem interested
This is from an M&S recipe book that i got a while back, i pretty much stuck to it)apart from not adding leeks or salt and using 5 counties cheese) though i halved everything so we didn't make too much.
To make enough for 4 people
- 2 tbsp butter
- 2 garlic cloves, chopped
- 1 large onion, chopped
- 250g smoked bacon, chopped
- 2 leeks, trimmed and sliced
- 2 tbsp plain flour
- 1 litre veg stock
- 450g potatoes, chopped
- 100ml double cream
- 300g cheddar cheese, grated, plus a little extra to garnish
- salt and pepper
Melt the butter in a large pan over a medium heat, add the garlic and onion and cook for around 3 minutes until softened, add the chopped bacon and leeks and cook for another 3 minutes while stirring.
In an bowl mix the flour with enough stock to make a paste then stir this into the pan, cook for 2 minutes and then pour in the remaining stock and then add the potatoes.
Season with salt and pepper, bring to the boil, then lower the heat and simmer gently for 25 minutes until potatoes are cooked through.
Stir in the cream and cook for 5 minutes and then gradually stir in the cheese until melted.
Remove from the head and serve in warm soup bowls garnished with grated cheese.
Serve with some lovely homemade bread and butter :)
