Recipe: Basic Biscuits with a Chocolate Dip

On valentines night, Phil and I had a bit of a sweet treat. I made us some biscuits and a chocolate dip. 
These biscuits are pretty foolproof, you probably already have the ingredients,  they don't spread when baking and they can be easily adapted so i thought I'd post the recipe as it's always handy to have an easy biscuit recipe. This one made approx 20 small biscuits.
 115g softened butter
 55g caster sugar
3 or 4 drops of vanilla extract
150g plain flour
25g cornflour

Pre heat the oven to 180oC. 
Cream together the butter, sugar and vanilla essence. Then add all the flour and mix until it forms a dough.
Cover with clingfilm and chill for 30 mins.
Roll out the dough on a lightly floured surface until it is approx 1/2cm thick and then cut out your shapes. 
Place on a baking tray on some greaseproof paper and pop into the oven for 10 minutes. 
Take out and leave to cool. 

As i said is a really simple recipe to adapt, i added grated orange rind to half of this batch for orange biscuits.

As we were dunking ours i just put some letters on with writing icing but of course you could do whatever you wanted with them.
The chocolate dip was super easy to make. I took 100g of chocolate, broke it up, popped into a pan and melted along with 6 tablespoons of double cream.  This made loads though so next time i would halve the amounts
 As well as the biscuits, we had marshmallows and jelly babies to dip. Oh so naughty, but so nice!
