Chocolate chip rainbow pancakes

I love making pancakes for breakfast and we usually have them with chocolate spread, sprinkles and a candle in the top on  birthdays. 
This week I decided try rainbow pancakes and as we had half a pack of chocolate chips in the cupboard I popped those in too. Not the healthiest breakfast but fun as a treat. 

125g plain flour
1tsp baking powder
2tbsp of sugar
pinch of salt
50g chocolate chips
1 egg
125ml milk
2tbsp oil
  Food colourings (I use Sugarflair)

Stir together your dry ingredients(including the chocolate chips), then in a separate bowl beat your egg before adding the milk and oil then pour into the bowl of dry ingredients. Beat together until the mixture is smooth then leave to stand for a few minutes. Separate the batter into separate bowls, one for each colour you have. Add the colouring and stir well so the colour is even. 
Add a little oil to a frying pan and warm on a medium heat, add a large spoonful of batter into the pan. Cook until the top of the pancake starts to bubble before flipping until cooked. Repeat with each colour of batter in turn. Stack your pancakes and eat! 

With my last pancake I made a multicoloured version by spooning the remains of each colour into the pan and cooking. You could so it with the whole batch instead of plain colours if you prefer.
