Pasta and meatballs is one of Sebs favourite meals, we are a a pasta loving family anyway and these slow cooker meatballs in tomato sauce are the perfect topping. I mentioned we were having them in this weeks meal plan and thought i’d pop the recipe up.
You can either make your own meatballs or use ready made ones from the fresh food section in the supermarket, I prefer homemade especially as they are so simple so i have included how I make them, I vary the meat from beef to pork or turkey. This recipe is very basic, i often add extra veg to the sauce of a dash of chilli powder for a different taste.
I don’t add salt to my cooking as i am cooking for young children but of course you can if you prefer. This recipe makes enough for 2 adults and 2 young children but is easy enough to adapt for more or less people.
For the meatballs
250g beef mince
1 egg, beaten
1/2 onion, finely diced
1 tsp mixed herbs
Add your ingredients into a large bowl and combine using your hands. Form 12 equally sized meatballs, making sure they are well squished together to stop them breaking apart.
For the sauce
1 carton passata
1 tbsp tomato puree
1 onion, finely diced
1 or 2 cloves of garlic, crushed
1 pepper, chopped
100g bacon lardons or chopped bacon
1 tsp mixed herbs
Brown your meatballs and bacon together on the hob and drain off any fat before adding to the slow cooker pot. Add all of the other ingredients into the slow cooker, give it a really good stir and cook on low for around 6 hours or high for 3-4 hours.
I like to give mine a quick stir halfway through the cooking time but you don’t have to do this.
Pop your pasta on to cook according to the instructions, drain and top with the slow cooker meatballs in tomato sauce with a sprinkle of grated cheese.
