When you are feeling poorly, homemade soup is definately something that can help to perk you back up again. I made this Slow Cooker Leek and Potato Soup last week when both boys were full of cold, Alex had a nap in the day so I took the chance to put this on and i'm glad I did as once he woke, he didn't want to be put down. It meant I had a nice healthy meal to offer with very little effort.
2 large potatoes
1tsp mixed herbs
700ml vegetable stock
Peel and dice your potatoes and onion, chop the leeks and place in the slow cooker.Pour over the stock, add the mixed herbs, stir together and cook on high for around 3 hours, until the potatoes are cooked through. Blend to desired consistency and serve. You can add a swirl of cream if desired.
