Curried Vegetable and Lentil Soup

Curried vegetable and lentil soup

You can use pretty much any veg which makes this a great soup for using things up instead of binning them. You can also vary the amount of curry powder to your tastes.
60oml Veg Stock
1 clove of garlic, minced
Veg(I used onion, carrot, swede, celery and a potato)
2 tsp Curry Powder
a handful of red lentils
Peel and chop your garlic and veg before adding to the slow cooker, mine was diced into cubes roughly 1cm. Pour the veg stock over, add the curry powder, lentils and coriander. Cook on low for 7-8 hours or high for 4 hours. Blend to desired consistency and serve.
I picked up some garlic and coriander pitta breads in the reduced section for 25p and these were perfect to serve with the soup. Naan would be yummy too.
