Yesterday was grey and rainy here in West Yorkshire. To counteract the weather I decided to get out the food colourings and make some marble rainbow fairy cakes to brighten up our day.
I love marbling colours, less faff than a rainbow cake with all the brightness, i made Sebs third birthday cake this way too. If you want to make really bright cakes, you really need to use gel colourings. Sugar Flair and Wilton are available in cake shops and online (eBay is the best if you are buying a few colour at once). Both of my boys love it when we get lots of colours out to bake, it just seems to make it more exciting plus they get to decide which colours go where.
To make them even brighter we used some rainbow stripe cake cases, again from eBay, there are some amazing designs available on there.
100g self raising flour
100g caster sugar
1tsp vanilla extract
100g butter, softened
2 medium eggs
Preheat your oven to 180°C. Fill a bun tray with 10 fairy cake cases. Cream together your sugar and butter, add the vanilla essence and eggs and mix before adding the flours and combining to make the cake batter. Split the cake batter into four bowls (or however many colours you are using) and add a different colour food colouring to each. Randomly spoon the batter into the cake cases so you have different amounts of each colour in the cases in different patterns.
Bake for around 12-15 minutes until cooked. Allow to cool.
We iced our fairy cakes with a basic glacé icing(made green of course!) and topped with rainbow jazzies.
