Banana Muffins

We are big muffin fans in this house and I have shared quite a few muffin recipes on this blog now. Today I took advantage of the baby napping to whip up a batch of banana muffins. These are super easy to make and you can play around and add extras such chocolate chips or blueberries into the batter too. Another thing I love about these is that they freeze really well.

To make 8 large muffins

250g plain flour
100g caster sugar 
3tsp baking powder
175ml semi skimmed milk
75ml vegetable oil
1 egg

Preheat oven to 200°C and prepare your muffin tray with paper cases.
In a large mixing bowl mix your dry ingredients together and mix your wet ingredients in a seperate bowl. Then combine them together and until the dry ingredients are wet, don'the overmix, the batter should be a bit lumpy for muffins. Chop your banana into smallish chunks and stir into the batter. Fill your muffin cases around 3/4 of the way, and pop into the oven for around 10 minutes before turning the oven down slightly (180°C) and bake for another 10 minutes until cooked through. 
Cool and eat!
